Constantly inspired by those who are 'doing good', this month we profile the SecondBite Waste Not Want Not Gala dinner that was held at Crown Melbourne earlier this year. SLC was hugely involved with the annual fundraising event - from conceptualizing the design brief, to styling the event, and engaging sponsors as well.

SecondBite is a not for profit organisation that helps to ensure that surplus fresh food is redistributed to community food programs throughout Australia - whether it be the homeless, women and families in crisis, youth at risk, indigenous communities, asylum seekers and new arrivals - there are over two million Australians who are unable to afford enough food to feed themselves or their families. SecondBite ensures fresh, nutritious food, which was otherwise destined to be waste, is instead redistributed to these programs. They have over 1,200 community food programs across Australia and food is received from farmers, wholesalers, markets, supermarkets, caterers and events people.

With Matt Preston as its ambassador, the event is SecondBite's largest fundraiser of the year. The concept being to bring together fifteen of Melbourne's finest chefs to collaborate on a menu for guests to enjoy over stand up entrees and cocktails, followed by a two-course sit down dinner. The stand-up entree was one of the creative concepts Louisa developed to enable the chefs to showcase a specialty dish from their restaurant. She also encouraged them to make this dish waste-free where possible, with George Colombaris (The Press Club, Gazi, Hellenic Republic, Jimmy Grants) creating a Greek Salad using all the scraps that would otherwise have been thrown out. The theme of the main course was "From the culinary centre of the world - Victoria, to the four corners of the earth and back again".

Guest chefs this year included George Colombaris, Frank Camora (Movida, Movida Next Door, Movida Aqui), Johnny di Francesco (400 Gradi), Scott Pickett (Estelle, Saint Crispin), Donovan Cook (The Atlantic), Shannon Bennett (Vue de Monde), Shane Quade (Lume), Philippa Grogan (Philippa's Bakery), The evening was hosted by radio personalities Sam Pang and Chrissie Swan. And SLC engaged sponsors such as Capi and Dann Event Hire, while collaborating with Viska Paper on design (all of whom generously donated their time and resources). Tanqueray Gin cocktails spiked with fresh twigs of rosemary were served throughout the evening, and redsequined clad bodies (courtesy of ‘The Huxleys’ performance artists Garrett (@garretthuxley) and William (@willhuxley)) - dressed as hungry lips - greeted guests on arrival! Apples, donated by Montague apples, were used as the centre piece for the tables, and then were given back to SecondBite at the conclusion of the event to be redistributed to their local community programs. And the food, well the food spoke for itself. It was incredible.

It was such a fun night and it was the hugest honor to be involved. We know where SLC will be next May!
